Recipe: Salmon Fillets Dijon (Baked)

A quick and easy way to enjoy salmon, this recipe takes less than 30 minutes from start to finish making it a good choice for week-day meals when time can be scarce. There are also plenty of variations to cater to personal tastes and to really make this recipe your own.

Ingredientscrusted salmon

4 salmon fillets (approx. 4 ounces/110g each fillet)

3 tablespoons of Dijon-style mustard

¼ cup of breadcrumbs

¼ cup butter, melted

salt & pepper to taste

Method: 

  1. Preheat your oven to 200 C (400 F). Line a shallow tray with a non-stick baking mat.
  2. Place the salmon on the baking mat (skin-side down if the fillet has skin on). Spread the top of each fillet with a thin layer of mustard, and season with salt and pepper.
  3. Add the breadcrumbs to the melted butter and mix well. Spread over each of the salmon fillets.
  4. Bake for around 10 – 15 minutes in a pre-heated oven. The salmon is cooked when it flakes easily with a fork.
  5. If the salmon is cooked before the topping has browned, place under the grill (broiler) for a couple of minutes until browned.

Variations:

  • Using different types of mustards like honey mustard or spicy brown mustard.
  • Adding a teaspoon of worcestershire sauce to the mustard.
  • Replacing the breadcrumbs with savoury crackers.
  • Adding parmesan cheese and/or herbs to the breadcrumb mix.
