Recipe: Apple Strudel

1 Granny Smith apple, peeled, cored and coarsely shredded

3 Granny Smith apples, peeled cored and slicedGranny Smith Apples

1 cup brown sugar

1 cup golden raisins

1 sheet of frozen puff pastry, thawed

1 egg

1/4 cup of milk


  1. Preheat oven to 200C (400F). Place a baking mat or parchment paper on a baking sheet.
  2. Place the apples in a large bowl. Add the sugar and raisins, and stir together. Set aside.
  3. Place the puff pastry on the baking sheet and roll out lightly with a rolling pin. Arrange the apple filling down the middle of the pastry lengthwise.
  4. Fold the pastry lengthwise to encase the filling. Seal the pastry edges by wetting your fingertips and rubbing the edges together.
  5. Whisk the egg and milk together and brush all over the top of the strudel.
  6. Bake for 35 to 40 minutes, or until the strudel is golden brown.

The baked strudel can be given a dusting of icing (confectioner’s) sugar to finish off and can be enjoyed with custard, ice-cream or cream.

Made this yesterday and ate it with custard. Kids and hubby loved it 🙂
